RECIPE Grated Carrot Salad

Grated Carrot Salad

Ingredients to mix in a bowl:

  • 4 c grated carrots
  • ¾ c cooked lentils
  • 7 medjool dates, pitted and chopped
  • ¼ c minced red onion
  • 5 chopped scallions
  • ½ c chopped cilantro
  • ½ c toasted pistachios
  • ½ c feta cheese
  • 2 tbsp oil
  • zest and juice of 2 limes
  • ½ tsp cumin
  • ¼ tsp nutmeg
  • ¼ tsp turmeric
  • pinch of red pepper flakes
  • ¼-1/2 tsp sea salt
  • ½ tsp pepper
