  • 4 cups spinach chopped⁠

Plant-Based Green Goddess Dressing⁠

  • 1 avocado⁠
  • 1 clove garlic⁠
  • 1 tablespoon sesame oil⁠
  • 1 tablespoon lemon juice⁠
  • 1 tablespoon low sodium soy sauce⁠
  • 1/2 tablespoon black sesame seeds⁠

Instructions⁠

  1. Preheat oven to 400°F⁠⁠
  2. Spread broccoli, zucchini, bell pepper, and red onion on a lined baking tray⁠⁠
  3. Toss with sesame oil, salt, and pepper to cover⁠
  4. Bake for 20 minutes or until soft and browned⁠
  5. Meanwhile, blend together dressing ingredients in a blender⁠
  6. Ensure quinoa and edamame are warmed⁠
  7. In each bowl, layer spinach, cabbage, quinoa, edamame, and roasted veggies⁠
  8. Drizzle each bowl with dressing and top with green onion⁠
